Recipe: No Mayo Chicken Salad Sandwich

No mayo chicken salad sandwich uses avocado insteadAbout 12 years ago, my sister concocted a recipe for chicken salad without mayonnaise. That’s right. For those of us who dislike mayo, there is a better alternative. Maybe this is paleo, maybe this is gluten-free, but Brenda threw together this recipe from things in her pantry before those buzzwords were all over social media and before social media.

5 things not to do on an airplane…this means you, buddy.

Things-Not-To-Do-On-AirplaneMost of these are basic manners and/or common sense, but a reminder is always helpful.

Thing #1 not to do on an airplane: Get up before drinks have been served.

Unless it’s an emergency, it’s best to wait. Otherwise you could end up like the poor sap on my flight to Las Vegas who got stuck behind the cart for 10 minutes waiting to get back to his seat.

Thing #2 not to do on an airplane: Hog the space in the overhead bins.

Seriously, you get to put one item in there and that’s it. Unless the plane is miraculously not full (almost never these days), you are being rude if you put your coat, your rolling bag, and your personal item up there.  Two of those things need to go under the seat in front of you. Birthday Travel: Where would you go?

Birthday travel: Where would you go?Have you ever gone anywhere special for a milestone birthday? Some people have large parties, I would rather take that money and spend it on a vacation.

For my 30th birthday, my family went to Las Vegas. It was a great time. We stayed at the Venetian. We had a lovely dinner at some restaurant that I can’t remember, but I know it was at the Venetian. I wore a pretty pink dress and was happy. Continue reading

What is your chef style?

I’m not talking about your rank in the kitchen, but the manner in which you behave in the kitchen.

Chef style: Cleaning

Or maybe you are lucky enough to have a wonderful mate who doesn’t mind cleaning up your giant mess since you create such wonderful culinary delights. Continue reading

The great red wine vs white wine debate

Red wine vs white wine debatePeople have asked me, do you like red wine or white wine?

My answer, “Yes.”

Why must we divide ourselves into two factions? Why is there a red wine vs white wine debate? I understand that there are some people who do prefer one over the other. I, myself, like both and will drink wine based on various things, mood, weather, mood, cravings, mood, meals,…did I say mood? Continue reading

What is your favorite wine? Hello, tempranillo!

What is Tempranillo? While I like both red and white, I do have some favorites. My favorite red? Tempranillo. What is tempranillo? I’m so glad you asked…even though you didn’t.

It’s flavor just speaks to me…ok that sounded pretentious. It doesn’t have a bite like some red wines. It has that interesting berry flavor which fancy people call cassis, but I call black currant. OK, I can also taste the plum. Yay plum! Continue reading
